Nano Bakery

Joie des Pains features long-rise artisanal breads, organic, rustic French pastries, and small-batch granola. Most of what we bake is for family and friends, but occasionally we sell items at holiday fairs or to individuals who contact us through the website.

Holidays 2025

This winter, we are offering special holiday granola with recent-harvest Georgia pecans and roasted Piedmontese hazelnuts.

Unlike most granolas, we use only heart-healthy olive oil—rather than canola or coconut oil—in our baking. We also use a high ratio of nuts to oats, with no seeds or fillers. Other special touches, including fresh-ground cardamom and organic ingredients, make our granola unique. Our granola is vacuum sealed in glass jars to maintain freshness, making it an attractive and practical gift for the holiday season.

About

Joie des Pains—the joy of breads—is a playful nod to my French-Canadian roots and to the joyful work that bread-making and baking involves.

My grandparents and great-grandparents grew up in Quebec, practicing farm-to-table long before it was a trend. While my grandfather, Ephraim, came to the United States, many of his siblings remained in Sainte-Marie-de-Beauce, Quebec. Two of his sisters married brothers from the Vachon family, whose parents founded the legendary Vachon pastries.

Although I never had the chance to meet many of my French-Canadian ancestors, they have passed onto me an unwavering belief that food should be simple, authentic, and minimally processed. Natural ingredients, combined with time and care, can create magic.

Philosophy

Joie des Pains, as the name suggests, celebrates the joy of bread-making and baking. At the center of this is an appreciation for the finest ingredients and for traditional baking methods.

All of our breads are slow-rise and use artisanal flours. Our breads do not contain instant yeast, and our sourdough uses only levain, without any added leavening agents or flavorings.

We use organic ingredients and the highest-quality spices, both for safety and superior flavor. We do not use preservatives or plastic in the kitchen. We use glass or stainless steel bowls for mixing and proofing. Our granola is stored in glass containers, which are then vacuum sealed to maintain freshness.
